7-Up Cake

Some great friends introduced this recipe to me many years ago, and let me tell you, it’s unforgettable! My favorite part is the slightly crunchy, caramelized edges. YUM!

For this recipe, you’ll want to use a large, deep Bundt pan. And if you haven’t tried it already, cut it into bite-sized pieces and serve with chocolate fondue. Double YUM!

Equipment

  • 1 12 C Bundt pan

Ingredients

  • C butter, softened
  • 3 C sugar
  • 5 lg. eggs room temperature
  • ¾ C 7-up soda
  • 2 tsp lemon extract
  • 3 C all-purpose flour
  • 1 T lemon zest

Instructions

  • Preheat the oven to 325℉. Spray the Bundt pan with cooking spray and set aside.
  • Start by creaming the butter and sugar together in a large mixing bowl. Use a hand mixer or stand mixer on medium speed, and blend until the mixture is light and fluffy. This step is crucial as it creates a soft and airy texture, which will make your final product deliciously tender.
  • With your mixer on a low setting, add the eggs one at a time. Make sure each egg is fully incorporated into the batter before adding the next. This step ensures a smooth and consistent mixture, setting the stage for the next burst of flavor.
  • Once the eggs are fully mixed in, pour in the lemon extract and give it a quick mix.
    Now, slowly add the 7-Up, allowing the carbonation to gently lift the batter, adding an airy texture to your dish. Mix until everything is just combined—don't overdo it!
  • Pour the batter into the pre-greased pan, making sure it's evenly distributed.
    Place the pan in the center of your preheated oven and bake for approximately 1 ½ hours, or until a toothpick inserted into the center of the cake comes out clean.
    Once baked, allow the cake to cool in the pan for about 10 minutes before turning it out onto a wire rack to cool completely. Slice and enjoy!

Notes

One of the best parts of this recipe is how versatile it is. Feel free to play with different flavor combinations! For a bright and citrusy twist, try substituting the lemon extract and 7-Up with orange soda and orange extract. Don’t forget to add some freshly grated orange zest to enhance the flavor even more. This simple swap brings a whole new dimension to your cake—perfect for those who love a fresh burst of orange!
