Cousin Eddie’s Christmas Campsite – Gingerbread House

Every couple of years I usually try to tackle making a gingerbread house during the holidays.

While watching one of our favorite Christmas movies last year, I had the idea of designing cousin Eddie’s (infamous) RV and imagining what his campsite could look like. This is what I came up with.

First, I made all the pieces of the RV out of cardboard, taped them together to make sure they fit, and then took them apart again so I could use each piece as a template for the gingerbread.

Before baking, I spooned some crushed butterscotch candies into the window cutouts to create the ‘glass’ effect.

I frosted each side and let them dry thoroughly before assembling the RV.

I made a ‘box frame’ out of gingerbread to serve as a base for the RV to sit on (not shown). This also allowed some height to get the wheels on. I cut a hole in the box and fed a 10-light strand of Christmas lights through it. leaving the plug on the outside.

Then the fun part began!

I made the fondant embellishments; lights, wheel hubs, RV vents/fans, and remaining scene items. Then I used food dye to hand paint the RV and each piece.

The entire project took 3 days to complete from start to finish.
